BBQ CHICKEN FOR DINNER

So today's Dinner was pretty easy nothing to hard to make . And It is one of Jorge favorite meal I make .BBQ CHICKEN with  some white rice on the side and Pico de Gallo ...

Pico De Gallo

1/2 cups seeded, diced tomatoes


1/4 cup diced red onion

1 tablespoon diced jalapenos

1 tablespoon minced garlic

Juice of 2 limes


2 tablespoons cilantro, plus extra for garnish

Salt and pepper

Directions

In a bowl combine all ingredients.



White Steam Rice
  • 2 cups long-grain white rice
  • 2 1/2 cups water
  • 1 teaspoon kosher salt (optional)




Directions
  1. Place rice in a fine-mesh strainer and rinse under cold water until the water runs clear.
  1. Place rice and measured water in a medium saucepan with a tight fitting lid and bring to a boil over high heat. Add salt (if using), stir to incorporate, cover, and reduce heat to low. Simmer undisturbed until rice is tender, about 15 minutes. Remove from heat and let sit covered to steam, about 5 minutes. Fluff with a fork and serve.



BBQ CHICKEN
This recipe serves 2 to 4 people.
What You'll Need:
4 chicken breasts
olive or vegetable spray
1 cup of your favorite barbecue sauce
salt & pepper to taste (optional)
Skillet/FLAT POT
Large pot with cover
Large spoon
Preparation:
  •  Clean chicken and place in large pot. Cover chicken with water and bring to a boil. 
  •  Reduce heat and continue to cook for about thirty minutes. 
  •  Spray skillet with an olive or vegetable oil. 
  •  Drain and move chicken to skillet. 
  •  Brown chicken on both sides. 
  •  Remove from heat and drain excess grease (if any). 
  •  Add barbecue sauce. 
  •  Return to stove and bring to a simmer. Use a large spoon to repeatedly stir and smother chicken with sauce. Add a little water if sauce is really thick. Season if desired. Remove when fully heated.
